Personally, I have used every version of macOS from classic to today (though not all when they were current). The early OS X stuff is great! I personally think that the UI has gotten worse over time. Macintosh System 6 and 7 were phenomenal, and 10 - 10.4 were amazing. After macOS Mavericks... it's kind of just down hill. I have a similar feeling for Windows. With Windows, 3.1 or 2k are the best UIs Microsoft achieved, and everything else is kind of bad, and it got worse progressively after Vista.
I agree wholeheartedly! Windows 2000 was peak Windows UI, though I do have a soft spot for XP. I never used classic Mac OS until about a year ago so I lean more toward favoring the OS X look and feel, but I do like OS 9 as well. I sometime wonder if it's less about the actual design, and more about a rejection of modern design language though. For instance, I used to hate the Vista/7 look, but as we've been in the Windows 8/10/11 world I've started to like those two systems more than I used to.
